Ezo Gelin Soup
Gelin means bride in Turkey, and Ezo is a female name. Rumor has it, this soup was prepared during Ezo bride`s wedding
Yield: 4 servings
Time: 40 minutes

300 gr of red lentils,
1.5 tablespoons of fine ground bulgur,
1.5 tablespoons of rice,
1 medium sized onion,
2 cloves of garlic,
5 tablespoons of olive oil,
1 tablespoon of tomato paste (organic),
1 liter of water or chicken broth,
1 table spoon of salt,
1 tea spoon of Black pepper,
Oregano (dried),
Mint (dried),
Red pepper (chili or another),
Juice of one whole lemon,
100 gr butter.

Wash the bulgur, lentils and rice and put them in a deep heavy-bottomed soup pot. Add 500 ml of water and let boil.
Once boiling, turn down the heat and keep cooking until all are soft.
Chop the onion and mince garlic into small pieces and place them in a pan. Add 4-5 tablespoons of olive oil and let sizzle for 1 minute over medium heat without browning.
Add a tablespoon of tomato paste on top of the onion/garlic mix and sautee for 5 more minutes.
Add the onion/garlic/tomato paste mix into rice/bulgur/lentil mix in the pot.
Add salt and black pepper to taste and let it cook for 10 minutes.
Take it off the stove and add the lemon juice.
For the sauce: Put the butter in a pan and let it melt. Add oregano, mint and red pepper and cook for three minutes. Serve on top of the soup.
